Vegetables

400 g sweet potatoes
1 red onion
2 garlic cloves

Chilli con carne

oil, for frying
300 g minced meat (beef)
½ tsp salt
700 g puréed tomatoes
3 dl beef bouillon
1 tsp mild paprika
¼ tsp chilli flakes
1 tin red kidney beans (approx. 400 g)
1 tin corn kernels (approx. 340 g)
salt and pepper to taste

To serve

200 g sour single cream
½ bunch coriander

How it's done

The kids can help at the marked areas .

Vegetables

400 g sweet potatoes
1 red onion
2 garlic cloves

Peel the sweet potatoes, cut into cubes. Peel and finely chop the onion, mince the garlic.

Chilli con carne

oil, for frying
300 g minced meat (beef)
½ tsp salt
700 g puréed tomatoes
3 dl beef bouillon
1 tsp mild paprika
¼ tsp chilli flakes

Heat the oil in a frying pan. Brown the meat in batches for approx. 3 mins. per batch, remove from the pan, season with salt. Reduce the heat. Sauté the onion, garlic and sweet potatoes for approx. 5 mins. Return the meat to the pan, pour in the passata and stock, season, bring to the boil. Cover and simmer over a medium heat for approx. 30 mins.

1 tin red kidney beans (approx. 400 g)
1 tin corn kernels (approx. 340 g)
salt and pepper to taste

Rinse and drain the beans and sweetcorn, add to the pan, simmer (uncovered) for approx. 15 mins., season.

To serve

200 g sour single cream
½ bunch coriander

Serve the chilli con carne with sour single cream. Tear the coriander, sprinkle on top.

Good to know
Tip: If you want to spice things up, add 1 tsp of chilli flakes.
Serve with: Rice or toast.
