How it's done

Preparation
Peel the potatoes and cut into small pieces. Peel and roughly chop the onion.
Soup
Heat the oil in a pan. Add the onion and sauté briefly. Add the potatoes and cook for approx. 2 mins. Pour in the stock, bring to the boil. Reduce the heat, cover and simmer for approx. 30 mins. until soft. Pour in the cream, puree the soup, season.
Sausages
Cut the sausage into thin slices, add to the soup.
To serve
Finely chop the parsley. Plate up the soup, garnish with parsley.
