Dough

160 g white flour
60 g ground cane sugar
1 pinch salt
80 g butter, chilled
1 fresh egg

Filling

30 g butter, soft
20 g ground cane sugar
20 g white flour
1 tbsp cinnamon

How it's done

Dough

160 g white flour
60 g ground cane sugar
1 pinch salt
80 g butter, chilled
1 fresh egg

Mix the flour, sugar and salt in a bowl. Cut the butter into pieces, add, rub together using your hands to form an even, crumbly mixture. Add the egg, mix quickly to form a soft, smooth dough; do not knead. Flatten the dough, cover and chill for approx. 30 mins.

Filling

30 g butter, soft
20 g ground cane sugar
20 g white flour
1 tbsp cinnamon

Beat the butter in a bowl, mix in the sugar, flour and cinnamon.

To shape

Place the dough between two sheets of baking paper, roll out into a rectangle (approx. 25 x 20 cm), chill for approx. 15 mins. Spread the filling on top, leaving a border of approx. 1 cm all the way around. Roll up the dough tightly from the long end.

Using a bread knife, cut the roll into slices approx. 1 cm thick, place on a baking tray lined with baking paper.

To bake

Approx. 12 mins. in the centre of an oven preheated to 200°C. Remove from the oven, leave the biscuits to cool on a rack.
