How it's done

Cook the fish fingers according to the packet instructions.
Combine the crème fraîche and tomato puree, season.
Cut the bread into eight slices. Toast on both sides in a non-stick frying pan. Tear off the mini lettuce leaves.
Spread the sauce over the bread, place the mini lettuce leaves and fish fingers onto half of the slices. Cover with the remaining slices of bread.
