Batter

150 g half-white flour
2 tsp baking powder
1 pinch salt
40 g sugar
50 g coconut flakes
2 ½ dl coconut milk
1 dl water
2 fresh eggs

Waffles

a little peanut oil

To serve

2 nectarines
100 g raspberries
2 tbsp maple syrup
2 tbsp coconut flakes

How it's done

The kids can help at the marked areas .

Batter

150 g half-white flour
2 tsp baking powder
1 pinch salt
40 g sugar
50 g coconut flakes
2 ½ dl coconut milk
1 dl water
2 fresh eggs

In a bowl, mix the flour with all the other ingredients up to and including the coconut flakes. Whisk together the coconut milk, water and eggs, add to the flour, whisk until smooth. Cover the batter and leave to stand at room temperature for approx. 30 mins.

Waffles

a little peanut oil

Heat the waffle iron, brush with a little oil. Spoon approx. 4 tablespoons of batter onto the waffle iron, cook for approx. 3 mins. Remove, leave the waffles to cool on a rack. Repeat these steps with the remainder of the batter.

To serve

2 nectarines
100 g raspberries
2 tbsp maple syrup
2 tbsp coconut flakes

Cut the nectarines into segments, place in a small bowl with the raspberries and the maple syrup, mix, arrange on top of the waffles.
