Muffin batter

150 g butter, soft
150 g sugar
1 pinch salt
4 eggs
1 dl milk
200 g half-white flour
60 g coconut flakes
1 tsp baking powder

How it's done

To prepare

12 paper cases

Place the paper cases in the muffin tin.

Muffin batter

150 g butter, soft
150 g sugar
1 pinch salt
4 eggs
1 dl milk
200 g half-white flour
60 g coconut flakes
1 tsp baking powder

Place the butter, sugar and salt in a bowl, mix using the whisk on a mixer. Add the eggs one at a time and continue to beat until the mixture becomes lighter in colour. Mix the flour, coconut flakes and baking powder, stir into the egg mixture alternately with the milk.

Muffins

2 kiwis

Peel and dice the kiwis, add to the batter, mix. Transfer the batter to the prepared tin.

2 kiwis

Peel the kiwis, cut into slices approx. 5 mm thick, arrange on top of the batter.

To bake

Approx. 30 mins. in the centre of an oven preheated to 180 °C. Take the muffins out of the oven, allow to cool slightly, remove from the tin and leave to cool on a rack.
