Filling

200 g leek
40 g dried tomatoes
3 sprigs rosemary
1 garlic clove
2 tbsp olive oil
¼ tsp mild paprika
½ tsp salt

Potatoes

1 kg mealy potato
salted water, boiling
40 g potato starch
¾ tsp salt

To fry

oil, for frying

How it's done

Filling

200 g leek
40 g dried tomatoes
3 sprigs rosemary
1 garlic clove
2 tbsp olive oil
¼ tsp mild paprika
½ tsp salt

Finely chop the leek, tomatoes and rosemary, crush the garlic clove. Heat the oil in a non-stick frying pan. Add the leek, tomatoes, rosemary and garlic, sauté for approx. 10 mins., season and leave to cool.

Potatoes

1 kg mealy potato
salted water, boiling
40 g potato starch
¾ tsp salt

Peel and chop the potatoes. Cook the potatoes (uncovered) in salted water for approx. 15 mins. until soft, drain thoroughly. Pass the potatoes through a food mill and into a bowl, mix in the potato starch and salt, leave to cool.

Patties

Divide the potato mixture into 8 portions. Place half of one portion in your hand, flatten slightly. Place approx. 1 tbsp of filling in the middle, place the second half of the potato mixture on top, press down firmly and shape into a burger. Proceed in the same way with the remaining portions.

To fry

oil, for frying

Heat a little oil in the frying pan. Fry the patties in batches over a medium heat for approx. 5 mins. on each side.
