How it's done
The kids can help at the marked areas .
Place the paper cases in the muffin tin.
Mix the flour, baking powder, vanilla and salt in a bowl.
Coarsely grate the carrots and apples. Mix the carrots, apples and spinach into the flour mixture.
Using the whisk on a mixer, beat the almond milk, oil and eggs until light and frothy, add to the vegetables, mix, transfer to the prepared tin. Coarsely chop the almonds, scatter on top.
Approx. 30 mins. in the centre of an oven preheated to 180°C. Remove from the oven, allow to cool slightly, remove from the tin and leave to cool completely on a rack.
