Biscuit dough

150 g butter, soft
120 g icing sugar
1 pinch salt
1 fresh egg
300 g half-white flour
20 g cocoa powder
¼ tsp baking powder

To fill

150 g red currant jelly

How it's done

Biscuit dough

150 g butter, soft
120 g icing sugar
1 pinch salt
1 fresh egg
300 g half-white flour
20 g cocoa powder
¼ tsp baking powder

Place the butter, icing sugar and salt in a bowl, mix using the whisk attachment on a mixer. Add the egg, mix in.Combine the flour, cocoa powder and baking powder, mix in, combine, do not knead. Shape the dough into a ball, flatten slightly, cover and chill for approx. 1 hr.

To shape

Roll out the dough in batches between two sheets of baking paper to approx. 4 mm thick.

Cut out penguins and llamas, arrange on two baking trays lined with baking paper.

To bake

Approx. 5 mins. per tray in the centre of an oven preheated to 200°C. Remove from the oven, leave the biscuits to cool on a rack.

To fill

150 g red currant jelly

Stir the jam until smooth, spread on the bottom half of the biscuits. Cover with the top half of the biscuits.

Shelf life: Store in an airtight container for approx. 1 week.
