Preparation

a little butter

Cake mixture

1 organic lemon
100 g half-fat quark
100 g butter, soft
180 g sugar
3 eggs
1 pinch salt
250 g white flour
1 tsp baking powder

Topping

150 g half-fat quark
100 g cream cheese
1 parcel vanilla sugar

Decorate

150 g strawberries
2 kiwis
2 bananas
50 g blueberries

How it's done

Preparation

a little butter

Line the base of a springform pan (approx. 23 cm) with baking paper, grease the sides.

Cake mixture

1 organic lemon
100 g half-fat quark
100 g butter, soft
180 g sugar
3 eggs
1 pinch salt
250 g white flour
1 tsp baking powder

Grate the zest from the lemon, squeeze out the juice. Place the lemon zest, lemon juice and quark in a bowl along with all the other ingredients up to and including the salt, mix using the whisk on a mixer. Combine the flour and baking powder, mix into the egg mixture. Transfer the cake mixture to the prepared tin.

Bake

Approx. 35 mins. in the lower half of an oven preheated to 200 °C. Remove from the oven, leave to cool on a rack.

Topping

150 g half-fat quark
100 g cream cheese
1 parcel vanilla sugar

Combine the quark, cream cheese and vanilla sugar. Spread the mixture on top of the cake.

Decorate

150 g strawberries
2 kiwis
2 bananas
50 g blueberries

Quarter the strawberries. Peel the kiwis and banana, cut into slices. Decorate the cake with the fruit.
