Dough

150 g sugar
200 g butter, soft
250 g white flour
½ tsp baking powder
½ tsp cinnamon
40 g cocoa powder
½ tsp salt

Filling

100 g icing sugar
4 tbsp cocoa powder
2 ½ tbsp water, hot
20 g butter, soft
sugar decorations

How it's done

Dough

150 g sugar
200 g butter, soft
250 g white flour
½ tsp baking powder
½ tsp cinnamon
40 g cocoa powder
½ tsp salt

Mix the sugar and butter in a bowl. Using the whisk on a mixer, until the mixture becomes lighter in colour.Add the flour and all the ingredients up to and including the salt and mix quickly to form a soft dough; do not knead.

To shape

Shape the dough into approx. 25 equally sized balls. Place on two baking trays lined with baking paper, leaving a little room between each ball. Use your thumb to make small depressions in the middle of the biscuits.

To bake

Approx. 8 mins. in an oven preheated to 170 °C (convection). Remove from the oven, gently press in the hollows once more using a teaspoon. Allow the biscuits to cool slightly, leave to cool completely on a rack.

Filling

100 g icing sugar
4 tbsp cocoa powder
2 ½ tbsp water, hot
20 g butter, soft
sugar decorations

Place the icing sugar in a bowl along with all the other ingredients up to and including the butter, mix well. Use a teaspoon to spread the filling in the hollows of the biscuits, sprinkle with sugar decorations, cover and chill for approx. 20 mins.
