To prepare

1 garlic clove
600 g kohlrabi

Kohlrabi

1 tbsp olive oil
2 dl vegetable bouillon

Patties

1 egg
100 g breadcrumbs
½ tbsp mustard
60 g grated Gruyère
a little pepper
olive oil for frying

To serve

250 g half-fat quark
1 tsp mild curry powder
¼ tsp salt
2 sprig parsley

How it's done

To prepare

1 garlic clove
600 g kohlrabi

Peel and finely chop the garlic. Peel the kohlrabi, cut into approx. 1 cm pieces.

Kohlrabi

1 tbsp olive oil
2 dl vegetable bouillon

Heat the oil in a pan. Add the kohlrabi and garlic, sauté for approx. 2 mins. Pour in the stock, bring to the boil, cover and simmer for approx. 5 mins. until soft. Remove the lid and continue to cook uncovered until the liquid has reduced. Leave to cool.

Patties

1 egg
100 g breadcrumbs
½ tbsp mustard
60 g grated Gruyère
a little pepper
olive oil for frying

Place half of the kohlrabi on a plate, mash with a fork, transfer to a bowl with the rest of the kohlrabi. Add the breadcrumbs and all the other ingredients up to and including the pepper, mix well. With your hands, shape the mixture into 12 equal-sized patties. Heat a dash of oil in a non-stick frying pan. Reduce the heat, fry the patties in batches over a medium heat for approx. 5 mins. on each side. Remove, keep warm.

To serve

250 g half-fat quark
1 tsp mild curry powder
¼ tsp salt
2 sprig parsley

Place the quark and curry powder in a small bowl, mix, season with salt, serve with the patties. Tear off the parsley leaves and scatter on top.
