Quinoa

60 g quinoa
water, boiling

Batter

100 g butter, soft
80 g coarse cane sugar
1 parcel vanilla sugar
1 pinch salt
2 eggs
2 ripe bananas (approx. 200 g)
150 g light spelt flour
1 tsp baking powder
½ tsp sodium bicarbonate

To serve

a little icing sugar, to dust

How it's done

The kids can help at the marked areas .

Quinoa

60 g quinoa
water, boiling

Add the quinoa to the boiling water, cook for approx. 15 mins. Rinse the quinoa under cold water, drain, leave to cool.

Tin

Place the paper cases in the muffin tin.

Batter

100 g butter, soft
80 g coarse cane sugar
1 parcel vanilla sugar
1 pinch salt
2 eggs
2 ripe bananas (approx. 200 g)

Place the butter in a bowl. Add the sugar, vanilla sugar and salt, mix using the whisk on a mixer. Add the eggs and mix in.Peel the bananas, mash with a fork, add to the mixture along with the quinoa, mix well.

150 g light spelt flour
1 tsp baking powder
½ tsp sodium bicarbonate

Combine the flour, baking powder and baking soda, add to the mixture, mix well. Transfer the batter to the paper cases using an ice cream scoop.

To bake

Approx. 20 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, remove from the tin, leave to cool completely on a rack.

To serve

a little icing sugar, to dust

Dust the muffins with icing sugar.
