Pasta

250 g pasta (e.g. farfalle)
salted water, boiling

Spinach

1 onion
1 garlic
1 tbsp olive oil
250 g baby spinach
¾ tsp salt
a little pepper

Peanut sauce

2 ½ dl coconut milk
2 ½ tbsp peanut butter
1 organic lime

To serve

50 g salted peanuts

How it's done

Pasta

250 g pasta (e.g. farfalle)
salted water, boiling

Cook the pasta in boiling salted water until al dente. Drain the pasta, retaining approx. 100 ml of the cooking water, set aside.

Spinach

1 onion
1 garlic
1 tbsp olive oil
250 g baby spinach
¾ tsp salt
a little pepper

Peel and finely chop the onion and garlic. Heat the oil in a pan. Add the onions and garlic, sauté for approx. 3 mins. Remove the pan from the heat, add the spinach in batches, allow to wilt, season.

Peanut sauce

2 ½ dl coconut milk
2 ½ tbsp peanut butter
1 organic lime

Place the coconut milk and peanut butter in a measuring cup along with the reserved cooking water, mix well. Add the peanut sauce and pasta to the spinach in the pan, bring to the boil. Reduce the heat, squeeze the juice from the lime, add, mix.

To serve

50 g salted peanuts

Plate up the pasta. Sprinkle the peanuts on top.
