Cashew & apple puree
Immerse the nuts in water for approx. 1 hr. Peel the apple, cut into pieces and place in a pan. Add the water, lemon juice and cinnamon stick, , bring to the boil, cover and simmer for approx. 10 mins. until soft, set aside to cool. Remove the cinnamon stick, mix with the drained cashew nuts and maple syrup in a blender until a creamy mixture forms. Spread the puree onto the rice cakes.
Slice the banana. Scatter coconut flakes over four rice cakes, top with the banana slices and blueberries to create bears’ faces.
Slice the banana and cut the apple into small segments. Top the remaining rice cakes with the banana slices, blueberries, apple segments and flaked almonds, to create owls.
