How it's done

Place the wooden skewers in cold water for approx. 30 mins.
Roughly grate the courgette, squeeze out the courgette juice. Mix the meat, courgette, mozzarella and breadcrumbs in a bowl, season, knead well by hand until the ingredients have combined to form a compact mass.
Shape into 16 balls with wet hands, thread onto 4 wooden skewers, place in a grill tray.
Shape the pizza dough into 16 balls. Thread the dough balls and cherry tomatoes alternately onto the remaining skewers. Brush all of the kebabs with oil.
Grill the mince kebabs in the grill tray and the pizza kebabs over/on a medium heat (approx. 200 °C for approx. 25 mins. all over.
Combine the quark and ketchup, season. Serve with the kebabs.
