How it's done

Grease the holes of the muffin tin with a little butter. Roll out the toast bread thinly with a rolling pin. Spread with butter, place in the muffin tin. Sprinkle with breadcrumbs.
Peel and finely chop the onion. Heat the oil in a pan. Briefly sauté the onion, add the spinach, cover and heat for approx. 10 mins. Remove the pan from the heat, allow to cool slightly. Roughly grate the cheese. Beat the eggs, mix the eggs and cheese into the spinach, season.
Pour the filling into the tin. Cut the cherry tomatoes in half, arrange on top of the spinach.
Approx. 15 mins. in the lower half of an oven preheated to 180°C.
