Butter mixture

100 g butter, soft
75 g coarse cane sugar
75 g sugar
1 egg

Coconut mixture

200 g coconut flakes
100 g white flour
½ tsp baking powder
½ tsp bourbon vanilla powder
¼ tsp salt

How it's done

The kids can help at the marked areas .

Butter mixture

100 g butter, soft
75 g coarse cane sugar
75 g sugar
1 egg

Place the butter, cane sugar and sugar in a bowl, mix well. Add the egg, mix in.

Coconut mixture

200 g coconut flakes
100 g white flour
½ tsp baking powder
½ tsp bourbon vanilla powder
¼ tsp salt

Mix the coconut flakes, flour, baking powder, vanilla and salt. Mix the coconut mixture into the butter mixture.

To shape

Line two trays with baking paper. Divide the cookie mixture into approx. 30 portions, shape into balls and space them out evenly on the baking trays, flatten into cookies.

To bake

Approx. 10 mins. per tray in the centre of an oven preheated to 180°C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.

Shelf life: Store in an airtight tin for approx. 3 weeks.
