Preparation

1 cup plain yoghurt (180 g)

Batter

125 g butter, soft
½ tbsp vanilla paste
1 cup sugar (180 g)
1 pinch salt
3 eggs
2 cup white flour (240 g)
1 cup wholemeal flour (120 g)
½ cup shelled ground almonds (50 g)
2 tsp baking powder
125 g strawberries

½ tbsp icing sugar

Mise en Place

Preparation

1 cup plain yoghurt (180 g)

Line a loaf tin (approx. 25 cm) with baking paper, empty the yoghurt into a small bowl, set aside. Rinse out the pot and dry thoroughly, use as a measuring cup.

Batter

125 g butter, soft
½ tbsp vanilla paste
1 cup sugar (180 g)
1 pinch salt
3 eggs
2 cup white flour (240 g)
1 cup wholemeal flour (120 g)
½ cup shelled ground almonds (50 g)
2 tsp baking powder
125 g strawberries

Place the butter and vanilla in a large bowl, beat in the sugar and salt. Add the eggs one at a time. Using the whisk on a mixer, beat for approx. 5 mins. until the mixture becomes lighter in colour. Mix the flour, almonds and baking powder into the mixture along with the reserved yoghurt. Dice the strawberries, mix into the batter. Transfer the batter to the prepared tin.

125 g strawberries

Cut the strawberries into slices, arrange on top of the cake batter, press down gently.

Bake

Approx. 1 hour 10 mins. in the lower half of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, tip the cake out onto a cooling rack and leave to cool completely.

Decorate

½ tbsp icing sugar

Dust the cake with icing sugar.
