Squash

200 g squash (e.g. butternut)
2 dl milk
50 g liquid honey
40 g butter

Dough

500 g light spelt flour
1 ½ tsp salt
½ cube yeast (approx. 20 g)
1 egg
50 g decorating sugar

How it's done

Squash

200 g squash (e.g. butternut)
2 dl milk
50 g liquid honey
40 g butter

Peel and finely grate the squash. Place the milk and honey in a pan, heat. Add the butter, melt.

Dough

500 g light spelt flour
1 ½ tsp salt
½ cube yeast (approx. 20 g)

Place the squash, flour and salt in a bowl, mix. Add the crumbled yeast, pour in the milk, knead to form a soft, smooth dough. Cover the dough and leave to rise at room temperature for approx. 2 hrs.

To shape

Weigh the dough into 6 portions of 60 g each, 6 portions of 40 g each and 6 portions of 20 g each, shape all the portions into balls. Shape the remaining dough into a large ball, place in the centre of a tray lined with baking paper. Place the other balls in a star shape around it. Cover and leave to rise at room temperature for approx. 30 mins.

50 g decorating sugar

Beat the egg in a small bowl, use to glaze the star, sprinkle with the sugar crystals.

To bake

Approx. 30 mins. in the lower half of an oven preheated to 180 °C. Remove, allow to cool slightly. Leave the star to cool on a cooling rack.
