Potatoes

1 kg waxy potatoes, cooked in their skins day-old
1 tsp salt
a little pepper

Rösti

4 frankfurter sausages
oil for frying
60 g grated Gruyère

To serve

1 tbsp oil
4 fresh eggs
2 pinch salt

How it's done

The kids can help at the marked areas .

Potatoes

1 kg waxy potatoes, cooked in their skins day-old
1 tsp salt
a little pepper

Roughly grate the potatoes using a rösti grater, place in a bowl, season, mix well.

Rösti

4 frankfurter sausages
oil for frying
60 g grated Gruyère

Preheat the oven to 60 °C, warm the platter and plates.Cut the sausages into slices. Heat a dash of oil in a non-stick frying pan. Add the sausages, fry for approx. 2 mins. Add the potatoes, fry for approx. 2 mins., stirring occasionally. Shape the potatoes into a rösti, fry (uncovered) over a medium heat for approx. 10 mins. until golden brown. Place a flat plate on top of the rösti, tip the rösti out onto the plate, slide the rösti back into the pan, fry (uncovered) for approx. 10 mins.Sprinkle the cheese over the rösti, cover the pan with a lid and allow the cheese to melt. Keep it warm.

To serve

1 tbsp oil
4 fresh eggs
2 pinch salt

Heat a dash of oil in a non-stick frying pan. Crack the eggs one at a time and slide into the pan, fry over a low heat for approx. 3 mins., season with salt. Plate up the rösti with the fried eggs.

Good to know
Tip: Use ready-made rösti instead of pre-cooked potatoes.
