Dough

80 g butter, soft
50 g sugar
1 pinch salt
1 fresh egg
150 g white flour
½ tsp baking powder
¼ tsp cinnamon

Chocolate

100 g chocolate (e.g. Nice Nice Milky & Dark Fusion)

30 g cornflakes

How it's done

Dough

80 g butter, soft
50 g sugar
1 pinch salt
1 fresh egg
150 g white flour
½ tsp baking powder
¼ tsp cinnamon

Place the butter, sugar and salt in a bowl, beat using the whisk on a mixer. Add the egg and continue to beat until the mixture becomes lighter in colour.Combine the flour, baking powder and cinnamon, add to the bowl, mix.

Chocolate

100 g chocolate (e.g. Nice Nice Milky & Dark Fusion)

Break the chocolate into pieces, roughly chop, mix into the dough, mix by hand to form a soft dough (do not knead).

Cookies

30 g cornflakes

Divide the dough into 8 equal portions, shape into balls. Place the cornflakes in a deep dish. Roll the balls in the cornflakes, press gently on the coating. Transfer the balls to a baking tray lined with baking paper, making sure they are well spaced out, then flatten slightly.

To bake

Approx. 18 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.

Shelf life: Store in an airtight container for approx. 4 days.
