To prepare

a little olive oil
2 tarte flambée dough, rolled into a rectangle (each approx. 25 x 38 cm)
12 slice ham

Vegetables

1 red pepper
1 spring onion incl. green part
50 g baby spinach

Filling

100 g tangy Gruyère
200 g crème fraîche
3 eggs
¼ tsp salt
a little pepper

How it's done

To prepare

a little olive oil
2 tarte flambée dough, rolled into a rectangle (each approx. 25 x 38 cm)
12 slice ham

Grease the wells of the muffin tin with a little oil. Unroll both sheets of dough, halve lengthwise, cut each into 6 squares of approx. 12.5 cm. Place a slice of ham on each piece of dough, lay them in the greased wells, press the edges down a little, chill.

Vegetables

1 red pepper
1 spring onion incl. green part
50 g baby spinach

Halve the pepper, remove the seeds,dice, place in a bowl. Finely chop the spring onion.Roughly chop the spinach, add, mix.

Filling

100 g tangy Gruyère
200 g crème fraîche
3 eggs
¼ tsp salt
a little pepper

Roughly grate the cheese using a roesti grater, add to the vegetables along with the crème fraîche. Beat the eggs, add, mix well, season. Spread the filling on top of the ham.

To bake

Approx. 35 mins. on the bottom shelf of an oven preheated to 220 °C. Remove, allow to cool slightly on a rack. Carefully remove the quiche muffins from the tin, serve warm.
