Courgettes

500 g courgettes
¼ tsp salt

Egg mixture

6 fresh eggs
4 tbsp breadcrumbs
¾ tsp salt
a little pepper

Tortillas

clarified butter for baking

To serve

130 g ham in slices
125 g cream cheese with herbs

How it's done

Courgettes

500 g courgettes
¼ tsp salt

Roughly grate the courgettes using a roesti grater, place in a sieve, set the sieve on a bowl. Salt the courgettes, mix, leave to stand for approx. 5 mins. Squeeze out the courgettes well by hand, transfer to a bowl.

Egg mixture

6 fresh eggs
4 tbsp breadcrumbs
¾ tsp salt
a little pepper

Add the eggs and breadcrumbs to the courgettes, mix, and season.

Tortillas

clarified butter for baking

Heat a little clarified butter in a non-stick frying pan. Pour enough batter into the pan to thinly cover the base. Reduce the heat. Once the underside is cooked and separates from the pan, turn the omelette and finish cooking for approx. 2 mins. Remove, allow to cool slightly on a rack. Cook three more omelettes with the remaining eggs.

To serve

130 g ham in slices
125 g cream cheese with herbs

Tear the ham into pieces, spread the cream cheese on one half of each omelette, fold, then serve.
