Batter

150 g white flour
1 ½ tbsp sugar
¼ tsp salt
2 dl milk
2 fresh eggs
20 g butter, melted, left to cool

Strawberry sauce

250 g strawberries
½ tbsp sugar
1 tbsp lemon juice

Spaghetti crêpes

clarified butter for frying

To serve

3 tbsp coconut flakes

How it's done

Batter

150 g white flour
1 ½ tbsp sugar
¼ tsp salt
2 dl milk
2 fresh eggs
20 g butter, melted, left to cool

Mix the flour, sugar and salt in a bowl, create a well in the middle. Whisk the milk, eggs and butter, gradually pour into the well while mixing with a whisk, continue mixing until the batter is smooth. Cover the batter and leave to stand at room temperature for approx. 30 mins. Transfer the batter to a piping bag.

Strawberry sauce

250 g strawberries
½ tbsp sugar
1 tbsp lemon juice

Chop the strawberries, place in a measuring cup along with the sugar and lemon juice, puree.

Spaghetti crêpes

clarified butter for frying

Heat a little clarified butter in a non-stick frying pan. Cut off the tip of the piping bag, pipe spirals into the pan in batches, reduce the heat, fry for approx. 2 mins. on each side. Leave to cool on a rack. Cook more spirals using the remaining batter.

To serve

3 tbsp coconut flakes

Plate up the spaghetti, top with the strawberry sauce, sprinkle with the coconut flakes.
