Batter

150 g half-white flour
2 ½ tbsp cocoa powder
3 tbsp icing sugar
½ tsp salt
4 dl milk
4 fresh eggs

Omelettes

clarified butter for baking

To serve

400 g mixed berries (e.g. raspberries, blueberries, strawberries)
icing sugar, to dust

How it's done

The kids can help at the marked areas .

Batter

150 g half-white flour
2 ½ tbsp cocoa powder
3 tbsp icing sugar
½ tsp salt

Mix the flour, cocoa powder, sugar and salt in a bowl, create a well in the middle.

4 dl milk
4 fresh eggs

Add the milk and eggs to a measuring cup, mix well. Gradually pour the liquid into the well while stirring with a whisk, continue to whisk until the batter is smooth. Cover the batter and leave to stand at room temperature for approx. 30 mins.

Omelettes

clarified butter for baking

Heat a little clarified butter in a non-stick frying pan. Pour enough batter into the pan to thinly cover the base. Reduce the heat. Once the underside is cooked and separates from the pan, turn the omelette and finish cooking. Remove, allow to cool slightly on a rack. Cook more omelettes using the remainder of the batter.

To serve

400 g mixed berries (e.g. raspberries, blueberries, strawberries)
icing sugar, to dust

Plate up the omelettes, cut the strawberries into slices, scatter on top with the remainder of the berries, dust with icing sugar.
