All about the Grittibänz

What would Christmastime be without the Grittibänz? This little dough figure tastes delicious and is a great baking project for the whole family.

Baking your own Grittibänz

If you take a look at our Grittibänz recipe, you will see that you need to mix together a yeast dough – the most important ingredient of which is a little patience. The dough must be allowed to rise for two hours before you can shape it into one (or more) Grittibänz. Once it is nicely risen, you can start. First, roll a strand of dough to the height you want your bread man to be. Then cut away one quarter of the roll and turn it into a ball. You will use this later to make the head.

Leave the remainder of the roll intact but score down the middle of the lower third to create two legs. Then score down the right and left of the upper third to make arms. Place the head on top, press it down, decorate your Grittibänz however you like and put it in the oven.

Tips and tricks for a unique Grittibänz

Yeast dough tastes pretty delicious as it is, but have you ever tried it with a touch of lemon zest or orange zest? A pinch of Christmas spice such as cinnamon or cloves also goes well with this type of dough. Be inspired by your favourite Christmas smells and flavours and make your Grittibänz with a wonderfully festive yeast dough.

You can also work a small amount of chocolate, finely chopped nuts or dried fruit into your dough. Or you can colour it with food dye to make a colourful Grittibänz. Of course, you can also deviate from the classic recipe and make Grittibänz out of gingerbread dough or a yummy bread dough instead of yeast dough. Simply give it a go and you'll be amazed at just how different a Grittibänz can taste, smell and look!

The traditional decorations for a Grittibänz are raisins and sugar crystals. However, if you prefer to snack on nuts, seeds, dried cranberries or chocolate chunks, then you can use these ingredients for decoration instead. Provided it tastes good and can be baked in the oven, anything goes!
